Measure | Ingredient |

1 cup | White rice |
2 tablespoons | Olive oil |
3 tablespoons | Fresh basil; parsley, or mix of the two or 1T dried herbs |
1½ cup | Mozzarella; grated |
2 tablespoons | Parmesan; grated |
Cook rice. Empty into large bowl and stir in olive oil and herbs. Stir mozzarella into hot rice--it must melt. Sprinkle parmesan over top and serve immediately.
