Herby cheese and rice

1cupWhite rice
2tablespoonsOlive oil
3tablespoonsFresh basil; parsley, or mix of the two or 1T dried herbs
cupMozzarella; grated
2tablespoonsParmesan; grated

Directions

Cook rice. Empty into large bowl and stir in olive oil and herbs. Stir mozzarella into hot rice--it must melt. Sprinkle parmesan over top and serve immediately.
