Herby cheese and rice

Yield: 4 Servings

Measure Ingredient
1 cup White rice
2 tablespoons Olive oil
3 tablespoons Fresh basil; parsley, or mix of the two or 1T dried herbs
1½ cup Mozzarella; grated
2 tablespoons Parmesan; grated

Cook rice. Empty into large bowl and stir in olive oil and herbs. Stir mozzarella into hot rice--it must melt. Sprinkle parmesan over top and serve immediately.
