|750 grams||Maris Piper or Desiree potatoes; cooked and mashed|
|; (1 1/2lb)|
|50 grams||Butter; (2oz)|
|175 grams||Matured Cheddar cheese; grated (6oz)|
|3 tablespoons||Freshly chopped chives|
|Salt and freshly ground black pepper|
|25 grams||Plain flour; for shaping (1oz)|
|Oil for shallow frying|
Mix together the mashed potato, butter, grated cheese, chives and seasoning to taste. Chill the mixture for easy handling.
Shape the potato mixture with well-floured hands into 8 flattened triangle shapes.
Heat a little oil in a frying pan and fry the potato shapes in batches for 2-3 minutes each side until crisp and golden. Drain on kitchen paper and serve immediately.
