Herby cheese and potato cakes

Yield: 4 servings

Measure Ingredient
750 grams Maris Piper or Desiree potatoes; cooked and mashed
; (1 1/2lb)
50 grams Butter; (2oz)
175 grams Matured Cheddar cheese; grated (6oz)
3 tablespoons Freshly chopped chives
Salt and freshly ground black pepper
25 grams Plain flour; for shaping (1oz)
Oil for shallow frying

Mix together the mashed potato, butter, grated cheese, chives and seasoning to taste. Chill the mixture for easy handling.

Shape the potato mixture with well-floured hands into 8 flattened triangle shapes.

Heat a little oil in a frying pan and fry the potato shapes in batches for 2-3 minutes each side until crisp and golden. Drain on kitchen paper and serve immediately.
