Herby kidneys

Ingredients

| 1 | pounds | Pig's Kidneys |
| 4 | ounces | Smoked Back Bacon, Derinded |
| 2 | ounces | Butter |
| 1 | tablespoon | Lemon Juice |
| 3 | tablespoons | Freshly Chopped Mixed Herbs |
| 1 | tablespoon | Soy Sauce |
Directions
Core the kidneys and chop into small pieces. Chop the bacon.
Melt the butter in a frying pan and add the lemon juice. Stir in the chopped kidneys and bacon, and cook for 15 minutes.
Add 2 tablespoons chopped mixed herbs and the soy sauce to the frying pan and continue to cook for 5 minutes. Transfer to a warmed serving dish, then sprinkle the reamining herbs over the top. Serve Immeadiately.
