Herby kidneys

Yield: 4 Servings

Measure Ingredient
1 pounds Pig's Kidneys
4 ounces Smoked Back Bacon, Derinded
2 ounces Butter
1 tablespoon Lemon Juice
3 tablespoons Freshly Chopped Mixed Herbs
1 tablespoon Soy Sauce

Core the kidneys and chop into small pieces. Chop the bacon.

Melt the butter in a frying pan and add the lemon juice. Stir in the chopped kidneys and bacon, and cook for 15 minutes.

Add 2 tablespoons chopped mixed herbs and the soy sauce to the frying pan and continue to cook for 5 minutes. Transfer to a warmed serving dish, then sprinkle the reamining herbs over the top. Serve Immeadiately.
