|1 pounds||Pig's Kidneys|
|4 ounces||Smoked Back Bacon, Derinded|
|1 tablespoon||Lemon Juice|
|3 tablespoons||Freshly Chopped Mixed Herbs|
|1 tablespoon||Soy Sauce|
Core the kidneys and chop into small pieces. Chop the bacon.
Melt the butter in a frying pan and add the lemon juice. Stir in the chopped kidneys and bacon, and cook for 15 minutes.
Add 2 tablespoons chopped mixed herbs and the soy sauce to the frying pan and continue to cook for 5 minutes. Transfer to a warmed serving dish, then sprinkle the reamining herbs over the top. Serve Immeadiately.
