Cranberry salad for a crowd

Yield: 25 servings

Measure Ingredient
2 cups Ground cranberries, fresh or frozen
1 medium Apple, unpeeled, cored and cubed
1 cup Whipping cream, or other whipped topping
Lettuce cups or leaves
14 cans Crushed pineapple, drained
1 cup Granulated sugar
2 cups Small marshmallows
¼ cup Finely chopped pecans or walnuts


Mix together the cranberries, apple, pineapple, sugar and marshmallows. Whip cream until stiff. Fold into cranberry mixture, cover and chill until ready to serve (can be held overnight in fridge). Arrange onto lettuce leaves, and sprinkle nuts over top as a garnish. This will keep for 2-3 days. Origin: Homestyle, Canadian Classics, Ladies of the Royal Purple.
