Cranberry salad for a crowd

Ingredients

2 | cups | Ground cranberries, fresh or frozen |
1 | medium | Apple, unpeeled, cored and cubed |
1 | cup | Whipping cream, or other whipped topping |
Lettuce cups or leaves | ||
14 | cans | Crushed pineapple, drained |
1 | cup | Granulated sugar |
2 | cups | Small marshmallows |
¼ | cup | Finely chopped pecans or walnuts |
Directions
SERVES 25
Mix together the cranberries, apple, pineapple, sugar and marshmallows. Whip cream until stiff. Fold into cranberry mixture, cover and chill until ready to serve (can be held overnight in fridge). Arrange onto lettuce leaves, and sprinkle nuts over top as a garnish. This will keep for 2-3 days. Origin: Homestyle, Canadian Classics, Ladies of the Royal Purple.
