Chinaberry salad

Ingredients

4cupsCooked chicken, diced
1cupCelery, chopped
1cupPineapple tidbits, drained
1can(1lb) chinese vegetables, drained
1bunchScallions, sliced
Lettuce, or cabbage leaves
1cupCranberry sauce (jellied or whole berry)
1cupPrepared low-calorie Italian style dressing

Directions

In a large bowl, mix chicken, celery, pineapple, chinese vegetables and scallions. Spoon mixture innto salad bowl lined with lettuce leaves. In a small bowl, combine cranberry sauce and dressing until smooth and well blended. Pour over salad and toss gently to coat all pieces. Makes 8 serving. Approx 164 calories per serving.
