Spinach pieta

Ingredients

6packs(10 Oz.) chopped spinach; thaw and drain very
3poundsCheddar cheese; cut into small cubes
2tablespoonsSalt
18Eggs; well beaten
6poundsSm. curd cottage cheese
1cupFlour

Directions

Add flour to beaten eggs and beat until smooth. Add spinach, cheese, cottage cheese and salt. Mix well. Pour into two 12 x 20 x 2 greased stainless pans. Bake at 350 degrees for 1 hour, or until set. Let stand 10 minutes before cutting.

Makes 48 to 60 servings.
