Spinach cheese pie

| 1 | pack | (10 oz) frozen spinach |
| 3 | tablespoons | Butter |
| 1 | tablespoon | Flour |
| ½ | cup | Heavy cream |
| 1 | cup | Grated Monterey Jack OR |
| Mozzarella cheese | ||
| Salt and pepper | ||
Directions
Bake the pie shell. Cook the spinach and drain it. Preheat oven to 350 degrees.
In a medium saucepan, melt the butter over medium heat. Gradually stir in flour. When it thickens, stir in cream. Add ½ cup of cheese and stir until it is melted. Fold in spinach, salt and pepper. Pour into pie shell. Sprinkle the top with the remaining cheese.
