Ranch slaw

Yield: 4 Servings

Measure Ingredient
4 cups Thinly sliced napa cabbage (Chinese cabbage)
¼ cup Chopped red bell pepper
¼ cup Chopped yellow bell peppers
¼ cup Unsalted cashews, toasted
¼ cup Red wine vinegar
1 tablespoon Olive oil
⅛ teaspoon Salt
⅛ teaspoon Pepper

Combine all the ingredients in a large bowl, and toss well. Cover and chill 30 minutes. Yield: 4 servings (serving size: 1 cup).
