4cupsThinly sliced napa cabbage (Chinese cabbage)
¼cupChopped red bell pepper
¼cupChopped yellow bell peppers
¼cupUnsalted cashews, toasted
¼cupRed wine vinegar
1tablespoonOlive oil
teaspoonSalt
teaspoonPepper

Directions

Combine all the ingredients in a large bowl, and toss well. Cover and chill 30 minutes. Yield: 4 servings (serving size: 1 cup).
