Romaine salad with parsley dressing

Measure Ingredient
1 Romaine lettuce head
1 cup Flat-leaf parsley leaves
1½ tablespoon Lemon juice
¼ cup Extra-virgin olive oil -; (to 1/3 cup)
1 teaspoon Umeboshi vinegar

Tear romaine into bite-sized pieces. Combine dressing ingredients in the blender and puree. Toss to coat. This recipe yields ?? servings.
