Pineapple-pear jam

½mediumPineapple; cored, peeled, cut into 1-inch pieces
4largesRipe Anjou pears; peeled, cored, cut into 1\" pieces
4cupsSugar
cupFresh lemon juice

Directions

In food processor, pulse pineapple until evenly chopped. Strain.

Place pineapple juice in a large non-reactive saucepan with pears.

Cook over medium low heat until tender (about 10 minutes), stirring occasionally. Add chopped pineapple, sugar and lemon juice to saucepan. Turn heat down to low and let mixture simmer until thick, stirring frequently, about 1 hour. Cool.
