Party cheese-lime salad

Yield: 10 Servings

Measure Ingredient
Crocker CB 1980
2 cups Cottage cheese -- creamed
3 cups Boiling water
1 teaspoon Onion -- finely chopped
2 packs (3oz)each lime jello
1 teaspoon Green pepper -- finely
Chopped
1 cup Pineapple juice
½ cup Cucumber -- coarsly chopped
1 teaspoon Vinegar
½ cup Celery -- coarsley chopped
½ teaspoon Salt

Pour boiling water on gelatin in bowl; stir until gelatin is dissolved.

Stir in pineapple juice, vinegar and salt. Pour 1 cup of the gelatin mixture into 8-cup ring mold. Refrigerate until firm.

Refrigerate remaining mixture until slightly thickened but not set; beat with hand beater until light and fluffy. Mix in remaining ingredients; pour on gelatin layer in mold. Refrigerate until firm. Unmold on serving plate.
