Yield: 10 Servings
|Crocker CB 1980|
|2 cups||Cottage cheese -- creamed|
|3 cups||Boiling water|
|1 teaspoon||Onion -- finely chopped|
|2 packs||(3oz)each lime jello|
|1 teaspoon||Green pepper -- finely|
|1 cup||Pineapple juice|
|½ cup||Cucumber -- coarsly chopped|
|½ cup||Celery -- coarsley chopped|
Pour boiling water on gelatin in bowl; stir until gelatin is dissolved.
Stir in pineapple juice, vinegar and salt. Pour 1 cup of the gelatin mixture into 8-cup ring mold. Refrigerate until firm.
Refrigerate remaining mixture until slightly thickened but not set; beat with hand beater until light and fluffy. Mix in remaining ingredients; pour on gelatin layer in mold. Refrigerate until firm. Unmold on serving plate.
