Molded lime salad

Ingredients

1packLime gelatin powder -- 6 oz
1cupWater -- cold
1tablespoonVinegar
1dashSalt
1dashWhite pepper -- optional
¾cupMayonnaise
½cupCarrots -- shredded
½cupCucumbers -- peeded finely
Chopped
½cupCelery -- finely chopped
½cupGreen pepper -- finely
Chopped
2tablespoonsChopped onion -- finely

Directions

In a mixing bowl, pour boiling water over gelatin. Stir to dissolve.

Add cold water, vinegar, salt, and pepper if desired. Pour 1 cup of mixture into 6 cup mold; set aside. Chill remaining gelatin for 30 min then add mayonnaise and blend with a rotary beater until smooth.

Chill until almost set. Meanwhile, chill gelatin in mold until almost set. Turn mayonnaise/gelatin mixture into a bowl and whip until fluffy. Fold in vegetables. Spoon into mold. Chill until firm. Unmold to serve. Yield: 8 to 10 servings.
