Meat-potatoeburger

Yield: 4 Servings

Measure Ingredient
¾ cup Ground beef
¾ cup Potato; raw, coarsely ground
¼ cup Onion; coarsely ground
2 tablespoons Green bell pepper; chopped
1 teaspoon Salt
1 \N Egg
\N \N Drippings or fat
1 cup Tomato juice
1 tablespoon Flour

Mix all ingredient except fat, tomateo, and flour. Form into 4 patties.

Brown patties on both sides in fat in skillet. Add tomateo juice. Cover and simmer slowly until done, about 25 minutes. Remove and serve hot. Mix flour with a little water and stir slowly into tomato juice. cook slowly, stirring constantly until thickened. Pour sauce over cakes.

NOTES : Also works as a small casserole type dish. Than add 1 C. corn.
