Lime-orange salsa

White pith removed
1smallRed onion, finely chopped
1cupFresh lime juice
1cupChopped fresh cilantro
1tablespoonMinced chipotle peppers
1Glove garlic, minced
Salt & Pepper to taste

Directions

Working over a medium bowl to catch the juice, cut the orange segments from the surrounding membrane, letting the segments fall into the bowl. Add onions, lime juice, cilantro, chipotle peppers, and garlic. Stir to combine; season to taste w/S&P. (Can be prepared ahead and stored, covered, in the frig for up to 8 hours.) File
