|1 cup||Lime Juice|
|2 smalls||Limes; thinly sliced|
|2 teaspoons||Caribbean Jerk Spice|
|2 teaspoons||Rice Wine Vinegar|
Put the sugar and water in a small saucepan over moderate heat. Cook until the sugar caramelizes to a light golden brown. Carefully add the lime juice, limes, jerk spice and rice wine vinegar. Cook over a low heat for 15 minutes. Cool and serve at room temperature.
