Sweet lime salsa

| ¼ | cup | Sugar | 
| 1 | tablespoon | Water | 
| 1 | cup | Lime Juice | 
| 2 | smalls | Limes; thinly sliced | 
| 2 | teaspoons | Caribbean Jerk Spice | 
| 2 | teaspoons | Rice Wine Vinegar | 
Directions
Put the sugar and water in a small saucepan over moderate heat. Cook until the sugar caramelizes to a light golden brown. Carefully add the lime juice, limes, jerk spice and rice wine vinegar. Cook over a low heat for 15 minutes. Cool and serve at room temperature.
