Sweet lime salsa

Yield: 1 Servings

Measure Ingredient
¼ cup Sugar
1 tablespoon Water
1 cup Lime Juice
2 smalls Limes; thinly sliced
2 teaspoons Caribbean Jerk Spice
2 teaspoons Rice Wine Vinegar

Put the sugar and water in a small saucepan over moderate heat. Cook until the sugar caramelizes to a light golden brown. Carefully add the lime juice, limes, jerk spice and rice wine vinegar. Cook over a low heat for 15 minutes. Cool and serve at room temperature.
