Basil-lime salsa

1tablespoonOlive oil
1smallGarlic clove -- peeled
cupTomato -- seeded, chopped
cupCucumber -- peel, seed,
Dice
cupChopped green onions --
Finely chopped
2tablespoonsFresh basil -- chopped
¼teaspoonSalt
teaspoonPepper

Directions

Position knife blade in food processor bowl; add ½ cup tomato and next 4 ingredients. Process until smooth. Pour mixture into a medium bowl; stir in 1½ cups tomato and next 5 ingredients. Set aside.

Good on seafood salads.
