Orange-jalapeno salsa

Ingredients

½cupJalapeno jelly, * see note
2tablespoonsCider vinegar
2teaspoonsKosher salt
¼teaspoonGround red pepper
3Roma tomato, seeded and chopped
1cupRed onion, diced
3tablespoonsFresh cilantro, chopped
4teaspoonsJalapenos, chop
2largesNavel oranges

Directions

*OR use orange marmalade.

In a large bowl, blend jelly, vinegar, salt and red pepper. Add tomatoes, onion, cilantro and jalapenos. Grate zest from oranges and add to bowl.

Peel oranges, section and add pulp to bowl. Toss gently; adjust seasonings.

Like most relationships, this is better after some time has passed and the flavors have had a chance to work things out.
