Honey peanut butter banana muffins

Yield: 12 Servings

Measure Ingredient
¼ cup Honey
⅔ cup Lowfat buttermilk
½ cup Peanut butter; chunky
½ cup Banana; mashed
½ cup Egg
⅛ ounce Vanilla
1⅓ cup Flour
⅓ cup Oatmeal; uncooked
⅞ teaspoon Baking powder
⅞ teaspoon Baking soda
¼ teaspoon Cinnamon
\N \N Salt; to taste
¼ cup Peanuts; chopped

1. Combine and mix honey, buttermilk, peanut butter, bananas, eggs and vanilla.

2. Combine all remaining ingredients except chopped peanuts. Stir into honey mixture until just moistened.

3. Portion ¼ cup into greased or lined muffin tins. Top each cup with 1 teaspoon chopped nuts.

4. Bake in 400 F oven 18 to 20 minutes.
