Chocolate banana muffins

Yield: 6 Servings

Measure Ingredient
1 cup Flour
¼ cup Uncooked oatmeal (I used quick cooking oats)
2 tablespoons Sugar (next time I'll use more-these weren't quite sweet enough for my taste)
1½ teaspoon Baking powder
½ teaspoon Salt
3 tablespoons Cocoa
1 teaspoon Chocolate extract (would probably be fine without it-I happened to have it on hand)
1 Egg equivalent
½ cup Milk plus
2 tablespoons More milk; up to
1 Very ripe banana; mushed up with a fork

Combine dry ingredients. Mix wet ingredients in separate container, then mix quickly. You may need to add more milk to get the right consistency. I sprinkled the tops of the muffins with sugar to make this more of a dessert. This is a heavier, denser muffin. Bake at 400 for about 20 minutes.
