Chocolate banana muffins

| 2 | tablespoons | Sugar (next time I'll use more-these weren't quite sweet enough for my taste) |

| ½ | teaspoon | Salt |
| 3 | tablespoons | Cocoa |
| 1 | teaspoon | Chocolate extract (would probably be fine without it-I happened to have it on hand) |
| 1 | Egg equivalent | |
| ½ | cup | Milk plus |
| 2 | tablespoons | More milk; up to |
| 1 | Very ripe banana; mushed up with a fork | |

Combine dry ingredients. Mix wet ingredients in separate container, then mix quickly. You may need to add more milk to get the right consistency. I sprinkled the tops of the muffins with sugar to make this more of a dessert. This is a heavier, denser muffin. Bake at 400 for about 20 minutes.
