Homemade quick mix

Measure Ingredient
8½ cup Unbleached flour -- or
\N \N All-purpose
4 tablespoons Baking powder
1 tablespoon Salt
2 teaspoons Cream of tartar
1 teaspoon Baking soda
1½ cup Nonfat dry milk -- instant

1½ cup Dry buttermilk powder
2¼ cup Vegetable shortening

In a large bowl, sift together all dry ingredients. Blend well. Cut in shortening by hand or with a heavy-duty mixer until the mixture resembles cornmeal in texture. Put into an airtight container; label with date and contents. Store in a cool, dry pl Makes about 13 c of Homemade Quick Mix.

Variation: Use 4¼ c unbleached flour and 4 ¼ c whole wheat flour.
