|8½ cup||Unbleached flour -- or|
|4 tablespoons||Baking powder|
|2 teaspoons||Cream of tartar|
|1 teaspoon||Baking soda|
|1½ cup||Nonfat dry milk -- instant|
|1½ cup||Dry buttermilk powder|
|2¼ cup||Vegetable shortening|
In a large bowl, sift together all dry ingredients. Blend well. Cut in shortening by hand or with a heavy-duty mixer until the mixture resembles cornmeal in texture. Put into an airtight container; label with date and contents. Store in a cool, dry pl Makes about 13 c of Homemade Quick Mix.
Variation: Use 4¼ c unbleached flour and 4 ¼ c whole wheat flour.
