Cucumber-tomato salsa

Measure Ingredient
1.00 cup Seeded 1/4\"diced cucumbers
1.00 cup Seeded 1/4\" diced tomatoes
1.00 teaspoon Seeded minced hot jalapeno pepper
¼ cup Scallions
\N \N Lemon juice; to taste

Mix the ingredients together right before serving. Also a great topping for broiled or grilled fish or poultry. This recipe yields 2 cups.
