Coconut pecan frosting 2

Yield: 1 Servings

Measure Ingredient
1 cup Granulated sugar
½ can Evaporated (NOT condensed) milk (reg. size can)
⅛ pounds Margarine (1/2 stick)
2 Egg yolks, slightly beaten
1 dash Salt
1 teaspoon Vanilla flavor
1 cup Coconut
1 cup Chopped pecans

Place sugar, evaporated milk, salt and vanilla in heavy saucepan. Stir constantly over medium heat until margarine is melted. Take pan off heat and remove ½ cup of hot milk & sugar mixture and gradually stir in beaten egg yolks. Return saucepan to medium heat and gradually stir in egg yolk mixture.

Over medium heat bring to full rolling boil stirring constantly. Cook for EXACTLY 5 minutes. Remove from heat. Stir in coconut and pecans. Beat vigorously by hand with a wooden spoon until frosting reaches spreading consistency.
