Summer (macaroni) salad

Yield: 4 Servings

Measure Ingredient
4 cups Cooked salad macaroni
4 Stalks celery; chopped
3 Eggs; hard-boiled, whites only (up to)
7 Sweet pickles; chopped, with bit of juice (up to)
¾ cup Cubed fat-free Cheddar cheese (up to)
4 tablespoons Fat-free mayo; depending on taste
Paprika; for garnish

Mix all together and chill. Experiment with other ingredients, too. For example, I didn't have sweet pickles so used Kosher dills (ok but not as good, I thought). Also, I tried ff jack cheese but I think cheddar works better. Chopped green and/or red pepper could make salad interesting, too, and colorful. Add more or less ff mayo depending on how creamy you prefer.

Less mayo in this salad makes a good topping for lettuce salads. To your good health, Susan
