½ cup | Balsamic vinegar |
8 slices | Roma tomatoes; 1/8\" to 1/4\" thick |
8 slices | Smoked mozzarella cheese -; (abt 1/2 lb) |
8 slices | Red onions; 1/8\" thick |
8 \N | Whole basil leaves |
8 \N | Shredded basil leaves |
\N \N | Salt; to taste |
\N \N | Freshly-ground black pepper; to taste |
Place on in baking dish 8 separate, alternating stacks of 1 slice tomato, 1 leaf of basil, 1 slice onion, and salt and black pepper to taste. Combine olive oil and vinegar. Pour 1 tablespoon over the 8 stacks. Place 1 piece of thin sliced mozzarella cheese on top of each of the 8 stacks. Put under broiler, 3 to 4 minutes, until cheese melts. Garnish with shredded basil.
