Measure | Ingredient |

2 \N | Boxes frozen chopped spinach; drained |
2 cups | Bread crumbs |
6 \N | Shallots; sliced |
6 \N | Eggs; beaten |
¾ cup | Melted butter |
½ cup | Shredded cheese |
1 teaspoon | Minced garlic |
½ teaspoon | Thyme |
½ teaspoon | Cayenne pepper |
\N \N | Salt to taste |
12 slices | Tomato; thick |
Mix all ingredients in order listed except tomatoes. Take an ice cream scoop filled with mix & put on top of each tomato slice. Place on greased cookie sheet & bake for 20 minutes at 350. Makes 12 servings.
