Spinach williamsburg

Yield: 12 Servings

Measure Ingredient
2 \N Boxes frozen chopped spinach; drained
2 cups Bread crumbs
6 \N Shallots; sliced
6 \N Eggs; beaten
¾ cup Melted butter
½ cup Shredded cheese
1 teaspoon Minced garlic
½ teaspoon Thyme
½ teaspoon Cayenne pepper
\N \N Salt to taste
12 slices Tomato; thick

Mix all ingredients in order listed except tomatoes. Take an ice cream scoop filled with mix & put on top of each tomato slice. Place on greased cookie sheet & bake for 20 minutes at 350. Makes 12 servings.
