Spinach fantastic

Yield: 6 servings

Measure Ingredient
1 \N 6-oz. pkg. long grain & wild
\N \N Rice mix
2 \N 10-oz pkg. frozen chopped
\N \N Spinach, thawed
2 cups Monterey Jack cheese
¼ cup Butter or margerine, melted
1 tablespoon Chopped onion
¾ teaspoon Dry mustard
½ teaspoon Salt

Cook rice according to package directions. Press spinach between paper towels to remove excess moisture. Combine rice, spinach and remaining ingredients; spoon into a lightly greased 2-quart casserole.

Bake, uncovered, at 350-degrees for 35 to 40 minutes.

Note: You may assemble casserole, cover and chill for 8 hours. Remove from refrigerator; let stand at room temperature 30 minutes, and then bake as directed.
