Spinach cheese pie (crustless)

Ingredients

1packFrozen chopped spinach
3Beaten eggs OR 1/4 cup egg substitute +
2 eggs
1tablespoonFlour
6ouncesRicotta, pot or cottage cheese, drained
Salt and pepper, to taste
2ouncesBleu cheese or grated Cheddar
2tablespoonsMinced dried onion
Parmesan cheese

Directions

Thaw and drain spinach. Add eggs, cheese, salt and pepper and onion. Bake in Pam sprayed 9" pie pan or 8" square pan at 375 F. for 35-40 minutes. or Microwave for 9-10 minutes, turning once. Sprinkle with Parmesan cheese.
