Spinach cheese pie (crustless)

1 | pack | Frozen chopped spinach |
3 | Beaten eggs OR 1/4 cup egg substitute + | |
2 eggs | ||
1 | tablespoon | Flour |
6 | ounces | Ricotta, pot or cottage cheese, drained |
Salt and pepper, to taste | ||
2 | ounces | Bleu cheese or grated Cheddar |
2 | tablespoons | Minced dried onion |
Parmesan cheese |
Thaw and drain spinach. Add eggs, cheese, salt and pepper and onion. Bake in Pam sprayed 9" pie pan or 8" square pan at 375 F. for 35-40 minutes. or Microwave for 9-10 minutes, turning once. Sprinkle with Parmesan cheese.
