Spinach cheese pie (crustless)

Yield: 4 Servings

Measure Ingredient
1 pack Frozen chopped spinach
3 \N Beaten eggs OR 1/4 cup egg substitute +
\N \N 2 eggs
1 tablespoon Flour
6 ounces Ricotta, pot or cottage cheese, drained
\N \N Salt and pepper, to taste
2 ounces Bleu cheese or grated Cheddar
2 tablespoons Minced dried onion
\N \N Parmesan cheese

Thaw and drain spinach. Add eggs, cheese, salt and pepper and onion. Bake in Pam sprayed 9" pie pan or 8" square pan at 375 F. for 35-40 minutes. or Microwave for 9-10 minutes, turning once. Sprinkle with Parmesan cheese.
