Spinach quiche sans crust

Ingredients

| 1 | pack | Frozen chopped spinach |
| 3 | ounces | Grated fat free cheese or nondairy cheese-monteray Jack or cheddar style (up to 4) |
| 2 | Cloves minced garlic (optional) | |
| ¼ | teaspoon | Freshly ground black pepper (optional) |
| 6 | Egg whites | |
| ¾ | cup | Homemade bisquick (recipe to follow) |
| 1½ | cup | Skim milk or plain soy milk |
Directions
TOPPING
Thaw spinach and mix n garlic and pepper, if using. Sprinkle with cheese.
Mix together topping ingredients and beat well. Pour over spinach cheese mixture and mix together. Pour into a pie plate lightly with pam style spray. Bake at 400o for 30 to 35 minutes.
