Spinach quiche sans crust

Yield: 1 Servings

Measure Ingredient
1 pack Frozen chopped spinach
3 ounces Grated fat free cheese or nondairy cheese-monteray Jack or cheddar style (up to 4)
2 \N Cloves minced garlic (optional)
¼ teaspoon Freshly ground black pepper (optional)
6 \N Egg whites
¾ cup Homemade bisquick (recipe to follow)
1½ cup Skim milk or plain soy milk

TOPPING

Thaw spinach and mix n garlic and pepper, if using. Sprinkle with cheese.

Mix together topping ingredients and beat well. Pour over spinach cheese mixture and mix together. Pour into a pie plate lightly with pam style spray. Bake at 400o for 30 to 35 minutes.
