Impossible spinach pie

Yield: 8 Servings

Measure Ingredient
½ cup Sliced green onions
2 cloves Garlic; finely chopped
1 tablespoon Margarine
10 ounces Frozen chopped spinach; thawed & drained
½ cup Creamed cottage cheese
½ cup Bisquick
1 cup Milk
\N \N 3 Eggs
1 teaspoon Lemon juice
¼ teaspoon Pepper
3 tablespoons Grated Parmesan cheese
¼ teaspoon Ground nutmeg

Heat oven to 350~. In large skillet over medium heat cook onions and garlic in margarine 2-3 minutes or until onions are transparent. Stir in spinach. In greased 9" pie plate layer spinach mixture and cottage cheese. In medium bowl stir baking mix, milk, eggs, lemon juice and pepper with fork until blended: pour into pie plate. Sprinkle with Parmesan cheese and nutmeg. Bake about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve.

** High altitude: Bake 35-40 minutes.
