Spinach pie with cheese crust

Ingredients

1cupShredded Cheddar cheese
¾cupFlour
½teaspoonSalt
¼teaspoonDry mustard
¼cupMelted margarine
1packChopped spinach
½cupMilk
½cupHalf and half or evaporated skim milk
½cupFinely chopped onion
¼cupChopped mushrooms
1teaspoonSalt
¼teaspoonNutmeg
3Eggs (or use part egg substitute)

Directions

Mix well: Cheddar cheese, flour, salt, dry mustard and margarine. Pat into 9" pie pan. Filling: Cook spinach and drain well. Add milk, half and half, onion, mushrooms, salt and nutmeg. Beat eggs. Add part of eggs to spinach.

Mix well. Add rest of eggs. Pour into prepared 9" pie crust. Bake at 400 F.

for 15 minutes. Reduce heat to 325 F. and bake for 20-25 minutes more.
