Spicy banana muffins

| ⅓ | cup | Soya flour |
| 2 | teaspoons | Baking powder |
| ½ | teaspoon | Mixed spice |
| ½ | teaspoon | Ground cinnamon |
| 1 | cup | Unprocessed rice bran |
| ⅓ | cup | Brown sugar |
| 1 | cup | Mashed banana |
| ½ | cup | Sultanas (golded raisins) |
| 1 | cup | Soy milk |
| ½ | cup | Chopped dried apricots |
| 2 | ounces | Dairy-free melted margarine |
Directions
Prepare oven to 420øF, prepare pans. Sift flours, baking powder & spices into bowl, add remaining ingredients; stir until just combined. Spoon into pans & bake for about 35 mins or until cooked. Dust with sifted icing sugar if desired. Makes 12 muffins. Icing sugar = confectioner's sugar.
