1 cup | Brown rice flour |
⅓ cup | Soya flour |
2 teaspoons | Baking powder |
½ teaspoon | Mixed spice |
½ teaspoon | Ground cinnamon |
1 cup | Unprocessed rice bran |
⅓ cup | Brown sugar |
1 cup | Mashed banana |
½ cup | Sultanas (golded raisins) |
1 cup | Soy milk |
½ cup | Chopped dried apricots |
2 ounces | Dairy-free melted margarine |
Prepare oven to 420øF, prepare pans. Sift flours, baking powder & spices into bowl, add remaining ingredients; stir until just combined. Spoon into pans & bake for about 35 mins or until cooked. Dust with sifted icing sugar if desired. Makes 12 muffins. Icing sugar = confectioner's sugar.
