Spicy banana muffins

Yield: 12 Servings

Measure Ingredient
1 cup Brown rice flour
⅓ cup Soya flour
2 teaspoons Baking powder
½ teaspoon Mixed spice
½ teaspoon Ground cinnamon
1 cup Unprocessed rice bran
⅓ cup Brown sugar
1 cup Mashed banana
½ cup Sultanas (golded raisins)
1 cup Soy milk
½ cup Chopped dried apricots
2 ounces Dairy-free melted margarine

Prepare oven to 420øF, prepare pans. Sift flours, baking powder & spices into bowl, add remaining ingredients; stir until just combined. Spoon into pans & bake for about 35 mins or until cooked. Dust with sifted icing sugar if desired. Makes 12 muffins. Icing sugar = confectioner's sugar.
