|1 cup||Brown rice flour|
|⅓ cup||Soya flour|
|2 teaspoons||Baking powder|
|½ teaspoon||Mixed spice|
|½ teaspoon||Ground cinnamon|
|1 cup||Unprocessed rice bran|
|⅓ cup||Brown sugar|
|1 cup||Mashed banana|
|½ cup||Sultanas (golded raisins)|
|1 cup||Soy milk|
|½ cup||Chopped dried apricots|
|2 ounces||Dairy-free melted margarine|
Prepare oven to 420øF, prepare pans. Sift flours, baking powder & spices into bowl, add remaining ingredients; stir until just combined. Spoon into pans & bake for about 35 mins or until cooked. Dust with sifted icing sugar if desired. Makes 12 muffins. Icing sugar = confectioner's sugar.
