Spicy fruit muffins

Measure Ingredient
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
⅛ teaspoon cloves
¼ teaspoon nutmeg
1 cup shredded, pared apple
⅔ cup brown sugar or maple syrup
½ cup chopped walnuts
2 eaches eggs, beaten
⅔ cup apple juice
¼ cup butter, melted
1 cup bran flakes

Sift together flour, baking powder, salt and spices. Stir in apple, brown sugar and nuts. In a separate bowl, combine eggs, juice and butter. Stir into apple mixture just until blended. Fold in bran flakes. Pour into oiled muffin pans, filling each cup about ⅔ full. Bake at 400 degrees for 15-20 minutes. Makes 12 muffins
