½ \N | Clove garlic |
1 tablespoon | Light soy sauce |
1 tablespoon | Peanut oil |
½ teaspoon | Sugar |
½ teaspoon | Vinegar |
1. Peel and shred cucumbers. Sprinkle well with salt. Let stand 1 to 2 hours, then drain.
2. Mince garlic, then combine with soy sauce, peanut oil, sugar and vinegar, blending well. Add to cucumbers and toss. Serve at once.
VARIATION: For the garlic, substitute ¼ teaspoon cayenne pepper.
