5 mediums Carrots (up to 6)
1 teaspoon Salt
6 tablespoons Olive oil
1 tablespoon Lemon juice

1. Peel and wash the carrots, then grate. When ready to serve, add the salt, oil, and juice. Toss well and serve at once.
