Sharp gouda spread

Measure Ingredient
1 8-oz round real baby Gouda or Edam cheese, at room temperature
½ cup Finely chopped smoked sliced beef
¼ cup Sour cream
2 tablespoons Pickle relish
2 teaspoons Prepared horseradish

Slice top of wax on Gouda or Edam cheese into 8 sections, leaving sides and bottom intact; peel wax back to form petals. Carefully remove cheese from shell, keeping shell intact. Beat cheese until smooth; add beef, sour cream, relish and horseradish. Refill shell. Serve at room temperature with sliced apples and assorted crackers. Makes about 1 11/2 cups.
