Sausage and rice brunch bake

Ingredients

1poundsPork sausage
3cupsHot cooked rice
2cups(8oz) sharp cheddar cheese,
Shredded & divided
1Can cream of mushroom soup
1Can (4 oz) sliced mushrooms-
Drained
½cupMilk
3Eggs, lightly beaten
2teaspoonsCreole mustard
¼teaspoonOnion powder

Directions

Cook sausage in medium skillet over medium-high heat until well done; stir to crumble. Drain. Combine rice and 1½ cups of the cheese in medium bowl. Spread evenly in buttered 12x8 inch baking dish. Sprinkle sausage over rice mixture. Combine remaining ingredients, except cheese, in small bowl. Pour over sausage. Sprinkle remaining ½ cup cheese over-top. Bake at 350F 40 to 45 minutes or until set. Source: Favorite Recipes ch.
