Sauerkraut rice for a crowd

Ingredients

4 | quarts | Sauerkraut, drained |
6 | cups | Long grain rice |
3 | pounds | Lean ground beef or bacon |
2 | pounds | Butter or margarine |
4 | cups | Chopped onions |
3 | cups | Chopped celery |
4 | cups | Chicken broth |
½ | teaspoon | Pepper |
Salt and pepper to taste |
Directions
Boil and drain sauerkraut. Cook rice, rinse with hot water and drain.
Brown beef or fry bacon, draining fat. Saute in butter, the onions and celery. In large pot, mix all ingredients together and place in large roasters or casserole dishes and bake in 350F oven for 1-½ hours.
