Sauerkraut rice for a crowd

Ingredients

4quartsSauerkraut, drained
6cupsLong grain rice
3poundsLean ground beef or bacon
2poundsButter or margarine
4cupsChopped onions
3cupsChopped celery
4cupsChicken broth
½teaspoonPepper
Salt and pepper to taste

Directions

Boil and drain sauerkraut. Cook rice, rinse with hot water and drain.

Brown beef or fry bacon, draining fat. Saute in butter, the onions and celery. In large pot, mix all ingredients together and place in large roasters or casserole dishes and bake in 350F oven for 1-½ hours.
