Sauerkraut beef

Yield: 6 servings

Measure Ingredient
3 pounds Chuck
3 \N Onions
2 tablespoons Fat
1½ teaspoon Salt
¼ teaspoon Pepper
1 teaspoon Paprika
1½ pounds Sauerkraut
1 \N Bay leaf
1 cup Boiling water

Cut the beef in 2-inch cubes and brown with the onions in the fat.

Sprinkle with the salt, pepper and paprika. Cover and cook over low heat 30 minutes. Stir in the sauerkraut. Cook 10 minutes. Add the bay leaf and water. Cover and cook an additional 1½ hours. Remove bay leaf. Serves 6 to8. Recipe Source: THE ART OF JEWISH COOKING by Jennie Grossinger Publis
