Plum ginger chicken salad

Ingredients

| 1 | pack | Rice mix, long grain & wild |
| 2 | cups | Chicken breast, boneless; cooked and cubed |
| ½ | cup | Green onions; sliced |
| 4 | Plums; sliced | |
| 2 | tablespoons | Oil, vegetable |
| 2 | tablespoons | Lemon juice |
| 1 | tablespoon | Soy sauce |
| ½ | teaspoon | Ginger, ground |
Directions
Prepare rice mix as directed; cool to room temperature. Combine rice, chicken, green onions and sliced plums in large mixing bowl. To prepare dressing, combine oil, lemon juice, soy sauce and ginger; pour over rice mixture and toss lightly. Chill until served.
