Quick ginger chicken

| 3 | tablespoons | Soy sauce |
| 2 | tablespoons | Cooking Sherry (optional) |
| 1 | tablespoon | Corn starch |
| 1 | teaspoon | Sugar |
| 1½ | teaspoon | Minced fresh Ginger, or 1/2 ts dried ginger |
| 3 | tablespoons | Corn oil, divided |
| 2 | Red or Green Peppers, cut into strips | |
| 6 | Green Onions, cut into 2\" pieces | |
| 1 | large | Garlic Clove, minced |
| 2 | Whole Chicken Breasts, skinned, boned, cut into 1\" chucks | |
Directions
Stir water, soy sauce, sherry, corn starch, sugar and ginger until smooth; set aside. In large skillet heat 1 tbsp. corn oil over medium-high heat. Add peppers, green onions, and garlic; saute 4 minutes. Remove. Add remaining 2 tbsp. corn oil; heat, Add chicken; saute 5 minutes or until lightly browned. Stir corn starch mixture.
Add to skillet with vegetables. Stirring constantly, bring to boil over medium heat; boil 1 minute. If desired, serve with rice.
