Quick ginger chicken

1tablespoonCorn starch
1teaspoonSugar
teaspoonMinced fresh Ginger, or 1/2 ts dried ginger
3tablespoonsCorn oil, divided
2Red or Green Peppers, cut into strips
6Green Onions, cut into 2\" pieces
1largeGarlic Clove, minced
2Whole Chicken Breasts, skinned, boned, cut into 1\" chucks

Directions

Stir water, soy sauce, sherry, corn starch, sugar and ginger until smooth; set aside. In large skillet heat 1 tbsp. corn oil over medium-high heat. Add peppers, green onions, and garlic; saute 4 minutes. Remove. Add remaining 2 tbsp. corn oil; heat, Add chicken; saute 5 minutes or until lightly browned. Stir corn starch mixture.

Add to skillet with vegetables. Stirring constantly, bring to boil over medium heat; boil 1 minute. If desired, serve with rice.
