Quick ginger chicken

Ingredients

cup Water
3 tablespoons Soy sauce
2 tablespoons Cooking Sherry (optional)
1 tablespoon Corn starch
1 teaspoon Sugar
teaspoon Minced fresh Ginger, or 1/2 ts dried ginger
3 tablespoons Corn oil, divided
2 Red or Green Peppers, cut into strips
6 Green Onions, cut into 2\" pieces
1 large Garlic Clove, minced
2 Whole Chicken Breasts, skinned, boned, cut into 1\" chucks

Directions

Stir water, soy sauce, sherry, corn starch, sugar and ginger until smooth; set aside. In large skillet heat 1 tbsp. corn oil over medium-high heat. Add peppers, green onions, and garlic; saute 4 minutes. Remove. Add remaining 2 tbsp. corn oil; heat, Add chicken; saute 5 minutes or until lightly browned. Stir corn starch mixture.

Add to skillet with vegetables. Stirring constantly, bring to boil over medium heat; boil 1 minute. If desired, serve with rice.
