Chinese chicken salad

1Reserved Peking Chicken
5Scallions, white part only thinly sliced
½Red bell pepper -- sliced
2cupsReserved Stir Fried Broccoli with Garlic
1tablespoonHoney
3tablespoonsRice vinegar
tablespoonDark sesame oil
tablespoonSoy sauce, low sodium
¾teaspoonHot pepper sauce
tablespoonPeanut oil

Directions

Cut the reserved chicken into 1" chunks. You should have about 5 cups. Place in a microwave dish, cover with plastic, and warm in microwave at full power for 2 minutes. Meanwhile toss the scallions, bell pepper and reserved broccoli in a large salad bowl. Mix the honey , vinegar, sesame oil, soy sauce, hot pepper sauce, and peanut oil in a small bowl. Toss the chicken and vegetables with the dressing and serve.
