Peach salsa

Yield: 3 Cups

Measure Ingredient
2 cups Peach, ripe; peeled & diced
½ cup Onion, red; diced
½ cup Bell pepper, red; diced
½ teaspoon JalapeƱo or serrano; minced
2 teaspoons Olive oil
2 tablespoons Lime juice
¼ cup Mint, fresh; minced
2 teaspoons Ginger, fresh; grated

Combine all ingredients. Let flavors mellow for 30 minutes and serve.
