Peach coconut salsa

Ingredients

| 4 | Ripe peaches chopped coarsely | |
| 1 | medium | Onion finely chopped |
| ¼ | cup | Olive oil |
| 1 | Jalapeno or habanero pepper chopped finely | |
| 1 | tablespoon | Garlic finely chopped |
| ¼ | cup | Chopped cilantro |
| 2 | tablespoons | Fresh ginger finely chopped |
| 1 | Lime ; juice of | |
| ½ | cup | Shredded coconut |
Directions
Saute the onions and garlic in the olive oil until onions are opaque. Add remaining ingredients and heat through careful not to overcook.
