Peach coconut salsa

4Ripe peaches chopped coarsely
1mediumOnion finely chopped
¼cupOlive oil
1Jalapeno or habanero pepper chopped finely
1tablespoonGarlic finely chopped
¼cupChopped cilantro
2tablespoonsFresh ginger finely chopped
1Lime ; juice of
½cupShredded coconut

Directions

Saute the onions and garlic in the olive oil until onions are opaque. Add remaining ingredients and heat through careful not to overcook.
