Oriental ginger salad dressing

cupSalad vinegar; (I most often just sub cider)
3tablespoonsSoy sauce
cupChopped onion
¼cupFinely grated carrots
1teaspoonCelery seed
½cupCanola oil
½tablespoonSugar; or to taste, (up to 1)
1teaspoonMinced fresh ginger root

Directions

Combine all ingredients in food processor or blender, processing on high until veggies are finely minced. Cover and chill thoroughly until ready to serve over salad. Makes

1½ cup.
