Oriental ginger salad dressing

Ingredients

| ⅓ | cup | Salad vinegar; (I most often just sub cider) |
| 3 | tablespoons | Soy sauce |
| ⅓ | cup | Chopped onion |
| ¼ | cup | Finely grated carrots |
| 1 | teaspoon | Celery seed |
| ½ | cup | Canola oil |
| ½ | tablespoon | Sugar; or to taste, (up to 1) |
| 1 | teaspoon | Minced fresh ginger root |
Directions
Combine all ingredients in food processor or blender, processing on high until veggies are finely minced. Cover and chill thoroughly until ready to serve over salad. Makes
1½ cup.
