Mennonite carrot salad

Yield: 1 Servings

Measure Ingredient
3 \N Grated carrots
1 cup Celery - chopped
2 \N Tart apples (I usually use MacIntosh apples)
¾ cup Raisins
1 teaspoon Lemon juice

Dear Marilyn & all - This is a yummy carrot/raisin salad my family loves.

I'm not sure where I got the recipe originally, but it was when we lived n the Philadelphia area. May have been in the Philly paper. I have used this as a summer salad for over 25 years. The kids love it! Mix well. Cover and chill in refrigerator for at least 2 hours.

**NOTE: No dressing is needed, as the apples and carrots provide plenty of moisture.

** I serve this in scoops on a lettuce leaf. (use an ice cream scoop to get the right shape) Posted to TNT - Prodigy's Recipe Exchange Newsletter by "Karen Utz" <guku@...> on Apr 24, 1997
