Mediterranean vegetable salad

Yield: 8 servings

Measure Ingredient
4 \N Green Onions; chopped
8 \N Radishes; sliced
12 \N Plum tomatoes; diced
1 \N Seedless cucumber; diced
½ cup Parsley; chopped
1 clove Garlic; finely chopped
\N \N Salt and pepper to taste
3 tablespoons Olive oil
2 tablespoons Lemon juice

Toss the vegetables with oil and lemon juice to coat. The salad can be made a day in advance and kept covered and chilled.
