Mediterranean vegetable salad

Ingredients

| 1 | Seedless cucumber; diced | |
| ½ | cup | Parsley; chopped |
| 1 | clove | Garlic; finely chopped |
| Salt and pepper to taste | ||
| 3 | tablespoons | Olive oil |
| 2 | tablespoons | Lemon juice |
Directions
Toss the vegetables with oil and lemon juice to coat. The salad can be made a day in advance and kept covered and chilled.
