8Radishes; sliced
12Plum tomatoes; diced
1Seedless cucumber; diced
½cupParsley; chopped
1cloveGarlic; finely chopped
Salt and pepper to taste
3tablespoonsOlive oil
2tablespoonsLemon juice

Directions

Toss the vegetables with oil and lemon juice to coat. The salad can be made a day in advance and kept covered and chilled.
