Mixed vegetable salad

Ingredients

| 1 | each | Cucumber, peeled & sliced |
| 1 | small | Green papaya, seeded & julienned |
| 2 | eaches | Tomatoes, cut into wedges |
| 4 | tablespoons | Green onions, chopped |
| 4 | tablespoons | Cilantro, chopped |
| 4 | tablespoons | Peanuts, roasted & crushed |
| 2 | eaches | Red chilies, julienned |
| ¼ | cup | Lime juice |
| ⅛ | cup | Soy sauce |
| 2 | teaspoons | Sugar |
Directions
In a large salad bowl, arrange in layers the lettuce, cucumber, papaya, tomatoes, onion & cilantro. In a small bow, mix together the peanuts, chilies, lime juice & soy sauce. Pour over the salad, toss & serve.
