Greek vegetable salad

Quantity Ingredient
½ Head romaine lettuce
2 cups Chopped tomatoes
1 Cucumber; thinly sliced
1 small Onion; sliced or chopped
1 Green bell pepper; chopped
3 ounces Feta cheese; crumbled
4 tablespoons Red wine vinegar
2 teaspoons Olive oil
1 tablespoon Water
1 Clove garlic; crushed
Black pepper

submitted by: as5x@... (Amy Smalley) Here's a great salad recipe to accompany that EAster dinner. It is excellent. It comes from a Jenny Craig Diet Easter Menu so it should be fairly low in fat.

In a large bowl, toss lettuce, tomato, cucumber, onion, and green pepper.

Top with cheese. In a separate bowl, whisk oil, vinegar, water, garlic, and pepper. Pour over salad and toss.
