Les' cottage cheese garden salad

Ingredients

| 24 | ounces | Cottage Cheese, small curd |
| 1 | Stalk celery, diced | |
| ½ | Carrot, grated | |
| ½ | Green Bell Pepper, seeded, diced | |
| 4 | Scallions, diced | |
| 1 | Plum tomato, seeded, diced | |
| Salt and Pepper, to taste | ||
Directions
Mix all ingredients together. Refrigerate for 1 to 2 hours.
(Overnight is best. Serve on a bed of fresh spinach or lettuce.
Garnish with chopped or whole scallions.
