Les' cottage cheese garden salad

Yield: 6 Servings

Measure Ingredient
24 ounces Cottage Cheese, small curd
1 \N Stalk celery, diced
½ \N Carrot, grated
½ \N Green Bell Pepper, seeded, diced
4 \N Scallions, diced
1 \N Plum tomato, seeded, diced
\N \N Salt and Pepper, to taste

Mix all ingredients together. Refrigerate for 1 to 2 hours.

(Overnight is best. Serve on a bed of fresh spinach or lettuce.

Garnish with chopped or whole scallions.
