Les' cottage cheese garden salad

Ingredients

24ouncesCottage Cheese, small curd
1Stalk celery, diced
½Carrot, grated
½Green Bell Pepper, seeded, diced
4Scallions, diced
1Plum tomato, seeded, diced
Salt and Pepper, to taste

Directions

Mix all ingredients together. Refrigerate for 1 to 2 hours.

(Overnight is best. Serve on a bed of fresh spinach or lettuce.

Garnish with chopped or whole scallions.
